Main Dishes

Smoked Brisket:In a savory Caramelized Onion BBQ sauce; served with slider rolls, Balsamic Mustard, and House Pickles

Herb-Roasted Pulled Pork:With Smoked Tomato/Thai Chili BBQ; served with slider rolls, Citrus Slaw, Garlic Aioli, House Pickles, and Citrus Slaw

Southern Fried Chicken:(only available when serving off the truck) boneless, skinless Chicken Thighs, SmokedTomato/Thai Chili BBQ, served with Slider Rolls

Pan-Seared Salmon:With Olive Oil, Lemon and Herbs, Roasted Tomato and Garlic

Roasted Chicken: Cooked in White Wine with Mild Peppers, Onions and Herbs

Cornmeal Fried Shrimp:(only available when serving off truck) Louisiana-style with a delicate cornmeal batter; Typically served as a Po-boy with Smoked Tomato Remoulade, House Pickles, Sliced Tomatoes, Shredded Lettuce on New Orleans Leidenheimer French Bread 

Louisiana Gumbo: Starts with the “Holy Trinity” simmered in a Dark Roux; add Okra, Smoked Turkey and Andouille Sausage. Seafood option available.

Cajun Jambalaya: Cajun Seasoned Rice, Tomatoes, “Holy Trinity”, cooked with Chicken and Smoked Sausage

Louisiana Shrimp or Crawfish Boil: Cooked with Spices, Whole Onions, Corn on the Cob, and Red Potatoes

Vegetarian Pasta:Baked Ziti, Primavera-style with tomato-light cream-wine sauce and assorted veggies, e.g., spinach, tomatoes, mushrooms, zucchini, mild peppers and olives

Louisiana Red Beans and Rice:Red Beans cooked with sausage, ham and Creole seasonings, served on a bed of fluffy rice

Garlic-Herb Roasted Potatoes– Served with Herbed Crème Fraiche

Succotash Du Jour:Braised Butter Beans & Lima Beans with Fire-Roasted Yellow and White Corn, Tomatoes, Peppers and Onions, Fresh herbs, topped with Smoky Bacon (PLEASE NOTE: Changes seasonally; ask about our current offerings

Roasted Broccoli or Cauliflower: Lemon and Cider Vinaigrette, Toasted Garlic, shaved Parmesan

Collards:Stewed with Onions, Garlic and Seasonings, with or without seasoning meat

Corn Maque Choux: Fresh Corn, Simmered in Butter, with Onions, Peppers and Spices

Gourmet Mac & Cheese du Jour: Noodles baked in 3-cheese sauce with your choice of extras. Ask the Chef for details

Potatoes: Mashed, Au Gratin and other preparations are available

Buttermilk Cornbread:Better than your Momma’s! Made with Stone-ground cornmeal and fresh buttermilk.  Add cheese, jalapenos, and whole-kernel corn if desired.

DESSERTS

Fried Banana Foster:  Made into Empanadas and Served with Whipped Cream, Bourbon Crema and Cinnamon Sugar.

Seasonal Fruit Brulee’:  Topped with Mascarpone and Served with Whipped Cream, Drizzled with Honey and Sprinkled with Cinnamon Sugar.

We cater for businesses and private events including birthdays, weddings, anniversaries, bar and bat mitzvahs, as well as dinner parties in your home.
