Herb-Roasted Pulled Pork:With Smoked Tomato/Thai Chili BBQ; served with slider rolls, Citrus Slaw, Garlic Aioli, House Pickles, and Citrus Slaw
Southern Fried Chicken:(only available when serving off the truck) boneless, skinless Chicken Thighs, SmokedTomato/Thai Chili BBQ, served with Slider Rolls

Cornmeal Fried Shrimp:(only available when serving off truck) Louisiana-style with a delicate cornmeal batter; Typically served as a Po-boy with Smoked Tomato Remoulade, House Pickles, Sliced Tomatoes, Shredded Lettuce on New Orleans Leidenheimer French Bread
Louisiana Gumbo: Starts with the “Holy Trinity” simmered in a Dark Roux; add Okra, Smoked Turkey and Andouille Sausage. Seafood option available.
Cajun Jambalaya: Cajun Seasoned Rice, Tomatoes, “Holy Trinity”, cooked with Chicken and Smoked Sausage
Louisiana Shrimp or Crawfish Boil: Cooked with Spices, Whole Onions, Corn on the Cob, and Red Potatoes
Vegetarian Pasta:Baked Ziti, Primavera-style with tomato-light cream-wine sauce and assorted veggies, e.g., spinach, tomatoes, mushrooms, zucchini, mild peppers and olives
Louisiana Red Beans and Rice:Red Beans cooked with sausage, ham and Creole seasonings, served on a bed of fluffy rice

Buttermilk Cornbread:Better than your Momma’s! Made with Stone-ground cornmeal and fresh buttermilk. Add cheese, jalapenos, and whole-kernel corn if desired.
